21 day aged deer rump has been one of my favorite experiments. Rump as in upper leg thigh and backbone area (deboned except femur ) . It had a funk but the meat became so tender that you could pinch it off with your finger and thumb.
you know i dont think people would like me in high end restaurants the reason i like my meat well done and i am enaugh of a a hole to send it back if its dry
