I use Vidalia onions w/the same basic principles to make the jam. Take a rolled out sheet of puff pastry and evenly spread a thin layer of an herbed cream cheese (chives, dill etc..) over the puff. Goat cheese works very well. Then randomly spread your onion jam (longer onion strings are nicer) atop the cream cheese. Roll snugly, slice, into 1/2" pieces, placing pinwheels on their sides in a parchment covered baking sheet. Bake at 400F (200C) for 15 to 25 mins depending on your oven. (Pinwheels should be chilled before baking)

Oh man, onion and pepper jams are the MOOD this lovely late autumn! I just yesterday made a red onion and ginger jam with some balsamic. It's absolute incredible on top of a nice macaroni & cheese!

At what point in time did they stop teaching to turn the pan-handle away from the edge of the stove? Even if you don't have kids, you might bump it and end up with a horrible burn! Move the handle, people! It might take 2 seconds, but it can save you a lot of pain! Turn it away from the edge. Not hard, not even something I think about except when I see seemingly very smart people ignoring something so simple of a safety precaution. It's not that I think I am smarter or better or whatever. I have real trouble with the idea that not everyone knows this, because if I know it, then surely every other person over the age of 5 should also know it. Or at least everyone tall enough to use a stove, even with a step stool. I shouldn't care, strangers I will never meet shouldn't get me worried like this, except I can't help it. I don't like the idea of anyone bumping a pan and ending up with burns and probably scars. ER visits are never fun! Well, maybe for some sociopath or psychopath, but not the rest of us. Please turn the pan handles away from the edge of the stove, preferably not over another burner in use, but there are limits if your stove is in a corner.
Can I ask how this is different from caramelized onions? I ask because I don't use sugar (or vinegar) when I make them and they come out nice and sweet. Can you make this recipe without the sugar and vinegar? You know what? I just read the title again. This is shallot JAM. So perhaps that is the difference?
With cheese, any how, any way. 😉 I've made something similar but with mango and apricot to use as a chutney, but of course still great with cheese. Thanks for a jam that's much simpler to make.
I use a food processor for chopping them! Also freeze them a little before using them. I do this with chillies as well, when processing them for sauces or jams.
Light a candle close to the cutting board opposite you. The updraft will drag some of the gas away from you. Maybe… Or just use a razor sharp knife so you aren't breaking as many cell walls.

i think you cry less when your blade is as sharp as possible, so i would touch it up on a 3 sided stone before starting. it's a little safer, too.
I found keeping the roots on while chopping shallots and onions helps to minimize off-gassing. I still tear up… Just not so much. 😂

Chewing gum works everytime
If you briefly parboil your shallots for about :30 seconds, they will peel MUCH more easily.

It's not the same as shallots, but I bought a ton of red onions today and this recipe came in such a perfect timing!

Whenever I have to chop onions or shallots, I enlist the aid of my partner who never cries when he's chopping them. That way I don't cry!
