Yeh didn’t mention though cheffy that you shouldn’t simmer for too long or it becomes bitter and absolutely disgusting. And some fish bones can be extremely poisonous when boiled/simmered for too long. Bring to boil,then reduce to a simmer or light rolling boil for only a maximum of 20-30 minutes, then me personally I cover with a lid or cling film and let it infuse for a further 5-10 mins.
