YES! Love Bahn Mi. I love this Vietnamese style sandwich. The pickled veggies, cilantro definitely helps elevate this for me. Choice of meats vary but patte is my favorite. Pork is also my 2nd favorite. That homemade mayo is a nice touch!! Good job Byron! You can choose whatever meat you want – I've tried it with roast beef, duck, turkey, , chicken fish, straight up veggie style. The world's your oyster folks.
Vietnamese pate is different from American pate. It's my favorite part of the sandwich, aside from the pickled carrot and daikon and cilantro. An added bonus is garlic butter. But the butter has to be translucent and more yellow than traditional American butter…yumm
Not every bánh mì needs pate. In Vietnam, there’re hundreds types of bánh mì so dont try to be an expert by saying “u forgot the pate”. I just had a bánh mì with egg,beef jerky, picked radish and mayonnaise yesterday.

You forgot to remove some interior of the bread , you can stuff it with so much more filling that way 😅

If you don't care much about calories add some hoison sauce along with the mayo. Hoison almost has like a barbecue sauce taste but slightly sweeter
